Ingredients:
3 cups cooked rice
2–3 eggs
2 cloves garlic, chopped
1 onion, diced
1 carrot, diced
1 tbsp nasi goreng paste (made from blended garlic, chilli, onion and shrimp paste)
1 tbsp sweet soy sauce
1 tbsp salted soy sauce
1 tbsp cooking oil
Green onions, sliced
Salt and black pepper, to taste
Optional Garnishes:
Fried egg
Sliced green onions
Tomato wedges
Cucumber wedges
Fried shallots
Method:
Heat the oil in a wok over medium-high heat. Add the chilli, garlic and diced onion and sauté until fragrant.
Crack the eggs directly into the wok and scramble them together.
Stir in the diced carrots and cook for about a minute until slightly softened.
Add the nasi goreng paste and mix well. Then add the cooked rice and stir-fry, breaking up any clumps and coating the rice evenly with the paste.
Add the sweet soy sauce and salted soy sauce. Season with salt and black pepper to taste. Stir-fry until everything is well combined and fragrant.
Transfer the fried rice to a serving plate. Top with sliced green onions and fried shallots. Serve with a fried egg and fresh tomato and cucumber wedges on the side.
Optional: You can also add cooked chicken, shrimp or tuna into the dish.
